Slow Cooker Seasoned Chicken & Veggies

I adore slow cooker meals! Not that I don't enjoy cooking, but sometimes I just really don't feel like it. Slow cooker meals are fast to prepare, easy to put together, ready to eat when you get home from work, and most importantly... DELICIOUS! Try out this slow cooker chicken and veggies that's healthy, tasty, and easy as pie.

Ingredients:

  • 8 Bone-in skin on chicken thighs, or 4 large chicken breasts

  • 2 Cups raw potatoes sliced thickly

  • 2 Cups raw baby carrots

  • 1/4 tsp ground black pepper

  • 1/2 tsp dried oregano

  • 1/4 tsp crushed red pepper

  • 1 tsp dried basil

  • 2 T minced garlic

  • 1/2 Cup honey

  • 1/4 Cup ketchup

  • 1/2 Cup reduced sodium soy sauce

Directions:

Spray inside of slow cooker with non-stick cooking spray. Line slow cooker with carrots and potatoes and place chicken on top. In a large bowl combine soy sauce, garlic, honey, pepper, ketchup, basil, oregano, and red pepper flakes. Pour mixture over chicken, potatoes, and carrots. Cook on low for 7-8 hours or high for 3-4 hours. Serve and enjoy!
