Slow Cooker Salsa Chicken

I know as well as anyone that eating healthy isn't easy. Fresh ingredients cost more, there's a lot of prep involved, and a lot of cooking. A lot of people tell me that they just don't have the time for it, and with our busy lifestyles nowadays I couldn't agree more. It's difficult to fit everything you need and want to do in a day, and if you do fit everything you end up exhausted. This is why I enjoy doing slow cooker meals that I can throw on in the morning and don't need to worry about until it's time to eat. Try this one out! It's easy, delicious, and healthy all in one.

Ingredients:
1 16oz jar of your favorite salsa
2 15oz cans low sodium corn, drained
1 15oz can low sodium black beans, rinsed and drained
4-6 boneless chicken breasts
1 cup cheddar cheese
Directions:
In a large slow cooker combine corn, black beans and a 1/2 cup of salsa. Stir to combine and top with chicken. Pour the remaining salsa over chicken and cook on low for 6-8 hours. Top with cheese and serve. Enjoy!
***Hint: Wal-Mart has their own line of low-sodium canned goods if you cannot find any***
