Quinoa & Black Beans

As the research for my next informative post is taking longer than expected, I thought I'd share one of my favorite recipes. This is a quick, easy, delicious recipe that's surprisingly filling and has a variety of valuable nutrients. Try it out!

Ingredients:
1 T Olive Oil 1/8 Tsp Cayenne Pepper
1 Onion, Chopped 1 Cup Frozen Corn
3 Cloves Garlic 2 (15oz) Cans Black Beans, Drained and Rinsed
3/4 Cup Quinoa
1 1/4 Tsp Ground Cumin
1 1/2 Cups Vegetable Broth
Directions:
Heat oil in medium saucepan over medium heat. Add the onion and saute until lightly browned, about 5 minutes. Stir in garlic and cook for one minute. Add the quinoa and toss to coat well with oil. Stir in vegetable broth, cumin, cayenne, and bring mixture to a boil. Cover and reduce heat; simmer for 15 minutes. Stir in frozen corn, cover and continue simmering for 5 minutes. Add black beans, stir and heat through. Add salt and pepper to taste. Enjoy!
