Homemade Shrimp Fried Rice

One of my favorite take-out treats is Chinese food. But, Chinese food is typically loaded with fat and fried with unhealthy oils. And even though it's okay to indulge periodically, there are often times where I find myself craving typical Chinese food dishes. This is one of my favorites that I learned to make a home. It's just as delicious, and is a lot healthier than take-out. Try it out, I promise it's not as difficult as it might seem!

Ingredients
3 T Olive Oil
3 T Low Sodium Soy Sauce
1/2 Tsp Pepper
1/2 Tsp Ginger
2 T Minced Garlic
1 Medium Onion, Diced
1 Cup Frozen Peas and Carrots
1/2 Cup Frozen Corn
2 Green Onions, Sliced
3 Cups Brown Rice, Cooked
1 Pound Medium Shrimp
Directions
Heat 2 T olive oil in a large skillet over medium heat. Add shrimp and cook until pink stirring occasionally, about 2-3 minutes. Set aside. Add onion and garlic to skillet for about 3-4 minutes or until onion becomes translucent. Stir in frozen peas, carrots, and corn and cook until vegetables are tender. In a separate bowl, mix together soy sauce, the remaining olive oil, ginger powder, and pepper. Add rice, green onion, and soy sauce mixture to pan until heated. Stir in shrimp and serve when ready.
