Broccoli Macaroni and Cheese

Just like you can drink other types of milk such as soy milk, cashew milk, almond milk, etc., they can also be used in recipes. Smoothies, baking, and even cooking like in this broccoli macaroni and cheese. Try it out, you might be surprised how much you like it.

Ingredients:

1 Box Pasta of Your Choice

1 1/2 T Butter or Margarine

2 Cups Milk of Your Choice

1/4 Cup Minced Onion

1/4 Cup Flour

2 Cups Shredded Cheddar Cheese

1 Cup Vegetable Broth

2 Cups Fresh Chopped Broccoli

1/4 Cup Breadcrumbs

Directions:

Preheat oven to 375 degrees and spray a baking dish with cooking spray. In a large pot boil pasta and broccoli together until cooked. In a large saute pan melt butter and add minced onion and cook for about 2 minutes. Add flour and cook until well combined, about 1 minute. Stir in milk and broth and heat to a boil. Once at a boil allow to cook for 5 minutes until mixture becomes thick. Remove from heat and stir in cheddar cheese until melted. Stir in pasta and broccoli and mix well. Add mixture to baking dish. Top with breadcrumbs and bake 15-20 minutes until breadcrumbs are golden brown. Let cool for 5 minutes and enjoy!
