Pesto Tortellini Pizza

Looking for a delicious way to indulge this weekend? Try this pesto tortellini pizza with fresh mozzarella, pesto sauce, and sautéed peppers and onions. I promise you won't be disappointed!

Ingredients:

Whole Wheat Pizza Dough 1 1/4 Cup Baby Spinach

1/2 Block Fresh Mozzarella 1/4 Cup Fresh Basil

1/2 Medium Red Bell Pepper 1 Tsp Minced Garlic

1/2 Medium Green Bell Pepper 1/4 Cup Parmesan Cheese

1/2 Medium Onion

1 Cup Frozen Tortellini

4 T Olive Oil Divided

Directions:

Boil a medium pot full of water, add tortellini, cook until al dente, and strain. Add 3 T of olive oil, baby spinach, fresh basil, minced garlic, and parmesan cheese to blender and pulse until smooth. Slice peppers and onions into thin strips and add to a medium saute pan with 1 T olive oil. Stir occasionally until tender and onions are slightly blackened. Roll out pizza dough into a large circle until 1/4 inch thick. Spread pesto sauce onto pizza dough until sufficiently covered. Use your judgement. Slice mozzarella cheese into thin circles lay on top of pesto sauce. I usually use about 8 slices of the mozzarella. Spoon sautéed peppers and onions onto crust and top with tortellini. Bake at 400 degrees for about 20 minutes or until crust is slightly browned. Wait until slightly cooled and enjoy!
