Caprese Grilled Cheese

Not feeling a salad today, but still want to get your greens in for lunch? Try out this caprese grilled cheese containing fresh tomatoes, spinach, and basil. I promise you won't be disappointed!

Ingredients

1 1/4 Cup Baby Spinach 2 Slices Whole Wheat Bread

1/4 Cup Fresh Basil 3 Slices Fresh Mozzarella Cheese

1 Tsp Garlic 2 Slices Fresh Tomato

3 T Olive Oil

1/4 Cup Parmesan Cheese

Directions

Add 1 cup baby spinach, basil, olive oil, garlic, and parmesan cheese to food processor or blender and blend until smooth. Spread pesto sauce on both slices of whole wheat bread. Add mozzarella, tomatoes, and 1/4 cup baby spinach to bread and grill in pan or panini press on low heat. Sandwich is finished when bread is browned and toasted, and cheese is melted and gooey. Pair with tomato soup or balsamic dipping sauce if desired and enjoy!
